Gosari

Ingredient guide

Gosari 고사리

Dried bracken fern shoots (fernbrake). They are rehydrated, boiled, then seasoned and sautéed as a classic namul side dish, adding an earthy, chewy, almost meaty note to bibimbap and stews. Dried gosari must always be soaked and boiled before cooking — follow the package directions.

Taste

Earthy and subtle, with a chewy texture.

What to look for

Bags of dried or pre-boiled gosari in Korean grocery stores. The pre-boiled kind saves a lot of time.

Storing it

Dried gosari keeps a year or more in a cool, dry place. Once rehydrated or pre-boiled, refrigerate and use within a few days.
